About Aethos Monterosa In the middle of the Aosta Valley below the Monte Rosa and Cervino glaciers lies Aethos Monterosa. A 30-room five-star active luxury resort with two F&B outlets, a SPA, and its own climbing and ice climbing wall. We just took over the operations of Aethos Monterosa and will further develop the property with 20 additional rooms. We are now looking for an outstanding team that can help to fulfill our operational plan together with us. We are currently on a pre-winter season break, and when we reopen, the hotel has to be filled with life and a new team! The essence of great hospitality will however always be an outstanding team. Overview: Aethos Hotels is seeking an experienced and passionate Japanese Head Chef to lead the kitchen team at our exclusive Izakaya-style restaurant in the breathtaking Italian Alps. Our restaurant specializes in aged meats, expertly blending traditional Japanese culinary techniques with the rich, local flavors of the Alps.
Key ResponsibilitiesMenu Development: Craft and innovate a menu that showcases aged meats and traditional Izakaya dishes, ensuring a unique and memorable dining experience.Culinary Leadership: Supervise all kitchen operations, maintaining the highest standards of food quality, presentation, and authenticity. Inspire and train the kitchen team, fostering a culture of creativity and excellence.Ingredient Sourcing: Build relationships with local suppliers to source premium ingredients, emphasizing aged meats and seasonal produce. Ensure the best quality and sustainability in all ingredients used.Culinary Innovation: Continuously develop new dishes and techniques to enhance the restaurant's menu, keeping it fresh, exciting, and aligned with contemporary Japanese and Alpine flavors.Operational Excellence: Manage kitchen operations efficiently, ensuring compliance with health and safety regulations, maintaining kitchen cleanliness, and overseeing inventory and budgeting processes.Customer Engagement: Work closely with the front-of-house team to deliver exceptional service, engage with guests, and gather feedback to refine and enhance the dining experience.QualificationsProven experience as a sous chef or Head Chef in a Japanese restaurant.Deep knowledge of Japanese culinary traditions and techniques, combined with a flair for creativity and innovation.Strong leadership skills with the ability to mentor and inspire a diverse kitchen team, fostering a positive and collaborative work environment.Excellent organizational and time-management skills, with a proven ability to work efficiently under pressure.Passion for high-quality ingredients and sustainable sourcing, with an understanding of local Alpine produce and suppliers.Proficiency in Japanese and English; proficiency in Italian is a plus.What we offerCompetitive salaryAccommodation includedOpportunity to work in a stunning location, offering unparalleled views and a unique dining setting in the Italian AlpsCollaboration with a passionate and dynamic team at Aethos HotelsProfessional development and training opportunities, with possibilities for growth within the Aethos brandSpecial rates on stays and services at our hotel
