Join Our Team: We are excited to invite an experienced and passionate Sushi Head Chef to join our start-up team, located in a very prestigious area of Milan, above the clouds.
Key Responsibilities: Efficiently manage kitchen resources and ensure seamless operations for the kitchen, restaurant, and outdoor functions.
Oversee food preparation and presentation, maintaining high standards and brand requirements.
Control kitchen costs to meet budget and enhance profitability.
Supervise kitchen maintenance and repairs.
Manage food product orders and supplies for daily operations.
Ensure compliance with company policies, procedures, and governmental regulations.
Participate in the preparation and production of all food items.
Maintain food quality and consistency according to recipes and standards.
Ensure cleanliness and functionality of all equipment through regular inspections and preventive maintenance.
Collaborate with the Executive Chef to plan and develop menus.
Meet customer requirements for special requests and dietary needs.
Work with HR to recruit and ensure the quality of new kitchen staff.
Lead and coach kitchen staff to achieve objectives and targets.
Motivate and develop staff to encourage professional growth.
Evaluate staff performance and ensure timely reviews are submitted to HR.
Suggest salary reviews, promotions, and provide feedback to employees.
Maintain discipline and recommend corrective actions as needed.
Stay updated on industry trends and ideas to remain competitive in the local market.
Attend food seminars and exhibitions.
Perform other relevant duties as assigned.
Ability to travel for training and task force reasons.
RequirementsKnowledge, Skills, and Experience: Culinary Arts Diploma or similar degree.
Minimum 3 years of experience in a Sous Chef role or similar.
Extensive knowledge of Japanese cuisine, with experience in Japanese/fusion restaurants.
Prior management experience in a dining/luxury kitchen environment.
Proficient in kitchen policies, procedures, and food safety standards (HACCP).
Strong organizational and systematic work approach.
Excellent interpersonal, communication, and management skills.
Strong planning and budgetary skills.
High coaching skills to maintain a supportive role with kitchen teams.
Cooperative team spirit with excellent leadership abilities.
Effective problem-solving skills and the ability to handle multiple priorities under stress.
Ability to travel for training and task force reasons.
Work Specification: Location: On-site in Milan
Full-time position with shifts (day, evening, or split shifts as needed)
Fixed-term contract (6 months/1 year) or permanent contract based on experience.
Salary & Benefits: Competitive Salary for the Italian market
Annual salary paid in 14 monthly installments (extra salaries in July and December)
Severance payment: 1 monthly salary for every year of work
26 days of holiday entitlement per year
Meal allowance: €7 net per working day of at least 6 hours, paid monthly via electronic voucher (no canteen meals provided)
