No Offer Description SPIGA proposes to explore 3 pigmented grains, Triticum aestivum (blue) and 2 Triticum durum (purple and red), to obtain flours rich in polyphenols having antioxidant activities, useful to produce new sustainable cereal-based products with functional properties.
These grains show the ability to thrive in water-scarce conditions and withstand some grain pests and weeds.
SPIGA set up a system of industrial research for the creation of 6 new products based on pigmented grains for long life nutrition.
The project foresees the definition of new green processes to preserve the active compounds, the adoption of tailored production protocols for new pasta and bakery products, suitable to be scaled up to industrial production; presents a smart approach to integrating pigmented grains as eco-friendly cereals for the benefit of both the environment and human health.
By introducing new food products tailored to the Mediterranean Diet, SPIGA aims to develop dietary patterns and functional products and to diversify wheat-based foods with the potential to prevent and alleviate diseases such as diabetes, cardiovascular disorders, cancer, intolerances, and Alzheimer's.
