UPDATED (salary and accommodation) For a lovely small HNW family we are looking for a permanent creative Private Chef who is passionate about Japanese, other Asian and International cuisines, based in Varese (Lombardi), Italy (40 min from Milan). A clean drivers' license and family experience are essential. Sep. accommodation provided.
The client lives with his family in a beautiful country house with a very large professional kitchen. His work place is based close by in local offices (a lakeside location), which also contains a kitchen. The client frequently entertains with 2 course lunches at the office and 3-4 course dinners at the house (normally with 4 guests and very occasionally up to 10). These are served in an informal setting and consist largely of Japanese / Asian cuisine but also International dishes. Lunch is usually served between 1pm and 2pm, dinner at around 8pm. Other staff are able to assist the Private Chef with service or help in the kitchen if required. There are no dietary requirements and there may be some travel.
Duties of the Private Chef: Creating imaginative menus based on Japanese / Asian cuisine and international dishesSourcing, ordering and stocking fresh seasonal high quality produceOverseeing kitchen cupboards and stock levelsPreparing delicious and healthy dishes from the Japanese/ Asian cuisines including sashimi, grilled, simmered, steamed, deep-fried or dressed dishesLaying tables and presenting dishes wellKeeping kitchens tidy and clean to high standardsLiaising with the Private PA and the other staffIf possible, sourcing and purchasing traditional dishes/ utensils for an authentic experienceBudget management: Efficiently manage food-related expenses and maintain financial recordsIf required cook or bake with the children (when they visit)Requirements: Chef's qualifications and training4-5 years' experience cooking Japanese and Asian fine dining food with high quality productsIdeally experienced in working at Nobu, Zuma, Roka or similar high quality restaurantsFluency in English and ItalianMust be legal to work in Italy (visas and work permits can be obtained)Food Safety Level 2Having experience of cooking in a family setting is preferredAbility to cook simple and healthy meals (not Michelin style)Ideally the candidate is based locally or is willing to relocate to northern Italy if neededReferences from past private families and restaurantsRecent security checkThe client is looking for a dynamic, pro-active, creative, energetic and a keen Private Chef with a professional attitude and excellent knowledge of Japanese and international foods. This role allows the Private Chef a lot of freedoms to explore their passion for cooking and could be made available as a two year contract, if preferred. On very rare occasions some weekend work may be required, time in lieu given. The client may also be happy to pay for further training for the Private Chef if needed. Ideally the client would like to find someone local.
There will be an in-person interview and a trial before a job offer is made.
Local accommodation is provided as well as a car.
The hours: Mon - Fri 11am - 2pm and 5pm - 9pm with some flexibility, time in lieu given
Salary: € 60,000 - € 80,000 gross a year depending on experience and local accommodation offered as well as further training if required.
