We are seeking a passionate and skilled Head Sushi Chef to join our team.
Our restaurant will feature multiple experiences, including an Omakase counter, a spacious dining area, and an expansive open terrace with captivating scenic views of the vibrant city.
The restaurant promises an enchanting journey through Japan's diverse and exquisite flavors, emphasizing local ingredients and seasonal variations for a dynamic dining experience year-round.If you are a dedicated sushi chef with expertise in Omakase dining, we would love to hear from you.Main Duties:Manage kitchen resources and ensure the kitchen, restaurant, and external function systems operate effectively within budget.Oversee the preparation and presentation of sushi and sashimi, ensuring they meet company standards and brand requirements.Create and execute Omakase menus, delivering an exceptional and personalized dining experience.Ensure all food and products are prepared and served according to recipes, portions, cooking, and service standards.Control the ordering and receiving of sushi-grade fish and other necessary supplies for daily operations.Meet customer needs regarding special requests and dietary requirements.Collaborate with HR to ensure quality kitchen staff during the hiring process.Manage kitchen staff through coaching and training to enhance performance and achieve kitchen goals and targets.Motivate and develop staff to encourage professional growth.Maintain discipline and manage corrective actions.Update job knowledge to develop new and trendy ideas to keep up with local market competition.Perform other relevant tasks as assigned.Ability to travel for Task Force.RequirementsHospitality Diploma or professional qualification.Minimum 5 years of experience in a senior role in a luxury dining/kitchen environment.Extensive knowledge of Japanese cuisine, with a focus on sushi and sashimi.Proven experience in Omakase dining, with the ability to create and execute personalized menus.Ability to maintain high-quality control standards.Good knowledge of kitchen policies and procedures, their development, and applications.Excellent knowledge of basic food safety, HACCP, sanitation, and personal hygiene.Excellent interpersonal, communication, and management skills.Highly cooperative team spirit.High coaching skills to maintain a positive and supportive role for kitchen teams.Fluent in English and Italian.Strong planning and budgeting skills.Ability to manage multiple priorities and work under stress.Problem-solving skills.Full-time position.Fixed-term/indefinite contract.Shift work (daytime, evening, occasionally split).5 days out of 7.Gross annual salary: €50,000 - €60,000 (14 installments).Salary NET around 3,200 EUR per month.TFR not included in the 14 installments.Meal vouchers (€7 per working day - no company canteen).Accommodation possibility for the first 1-2 months.Company discounts.Dynamic and stimulating work environment.
