BASE Records Bistrot, new reality in Bari city center, is looking for head chef for its restaurant proposal. The project involves a proposal based on tapas and unique dishes (no first courses) in the logic of Mediterranean healthy food, everything in a bistrot atmosphere with a refined design that combines food, international cocktail bar, organic proposals and vinyl shop.
The location has a large kitchen and storage. The menu will be formed by unique and fast aperitif dishes, 8/10 tapas + 6/8 unique dishes. The room is composed of 2 rooms on the first floor for 30 covers + 20 aperitif covers on the ground floor and outdoor area. A team of 3 units is expected, plus extra. The offer covers aperitif and dinner, brunch on Sundays.
Expected tasks for head chef:Rearrange the gastronomic proposal with the owner, engineer the menu, and be able to compose innovative or in-line presentations.Be responsible for the selection of part of the personnel, management, training, and coordination of collaborators, organizing daily work, creating a harmonious and collaborative team using the management and IT tools provided by the company.Be responsible for the quality of the service provided and all activities provided by HACCP, monitoring the perfect functioning of the equipment and the good storage of products.Coordinate with the owner for the selection of suppliers, product choice, related food cost, orders, storage monitoring, and warehouse.Optimize costs and reduce waste, and adhere to company procedures for better monitoring and organization of work.Be an ambassador of the company's values and style, ensuring a competent, welcoming, and attentive service to customers.Required requirements:Prior experience and solid experience in the food service sector, preferably gained in international cuisine, even outside Italian territory.Strong communication and organization skills.Excellent stress management and problem-solving skills, flexibility.Strong predisposition to achieve goals.At least 3 years of experience in managing a kitchen.
