– F&B Operation Manager Position overview
In response to business growth and new challenges, we are seeking an F&B Operation Managerto join our Crew. This role will be key in ensuring operational excellence across all Food & Beverage areas, while upholding the highest quality standards, guest satisfaction, and the achievement of company goals.

The position is open for our Ethra Reserve property, located in Puglia, Castellaneta Marina (TA).
Ethra Reserve is situated within the Stornara Nature Reserve and offers 765 rooms across two beautiful 5-star hotels, Kalidria Hotel & Thalasso SPA and Alborèa Ecolodge Resort, as well as two charming 4-star resorts, Valentino Resort and Calanè Resort.
It features 18 dining and beverage areas designed to meet every type of need.
The candidate we are looking for will be responsible for the overall management of F&B operations within the Ethra Reserve.
Area of Responsibility:
• Strategic planning and execution of F&B operations to ensure profitability, high-quality service, and guest satisfaction
• Menu development in collaboration with executive chefs, ensuring the maintenance of quality standards
• Monitoring costs and analyzing key performance indicators (KPIs) to identify areas for improvement
• Efficient cost management and upselling strategies to enhance profitability and achieve revenue targets
• Definition and implementation of standard operating guidelines to ensure a consistent guest experience across all dining and beverage outlets
• Increase guest ratings through high-quality service and continuous attention to guest needs
• Ensure compliance with all food safety regulations and quality standards
• Staff management and specialized training to ensure they are always up to date with best practices and the latest industry trends
• Build strong partnerships with suppliers to ensure reliable and continuous sourcing
• Adoption of innovative solutions to guarantee excellence in service, perfectly aligned with guest expectations and needs
Specific knowledge and training
• Degree in Hospitality Management, Tourism and Hotel Management, Economics, or an equivalent qualification
• At least 5 years of previous experience in the same role, preferably in luxury Hotels or Resorts
• Excellent leadership, team management, and problem-solving skills
• Solid experience in budgeting, food cost monitoring, and financial report analysis
• Strong interpersonal and communication skills
• Excellent planning abilities
• In-depth knowledge of health, safety, and hygiene regulations, specifically applied to the Hospitality industry
• Excellent proficiency in Microsoft Office Suite and major email systems
• Fluent in both English and Italian (spoken and written)
• Knowledge of an additional foreign language is considered a plus
• Willingness to relocate to the work location
